Banana Kissed Mini Muffins

Makes 24 muffins

  • 4 packets Cream of Wheat Bananas & Cream Cereal (1 1/3 cups), divided
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 ¼ cups milk
  • 24 milk chocolate candy kisses, unwrapped
  • Preheat oven to 400°F. Spray 24-cup mini muffin pan with Baker's Joy¨ non-stick spray with flour.
  • In medium bowl combine 2 packets Cream of Wheat, flour, baking powder and baking soda. In large bowl with electric mixer on medium speed, beat butter and 2 envelopes Cream of Wheat until smooth. Beat in egg, then milk.
  • Spoon batter into prepared muffin cups and bake 11 minutes or until toothpick inserted into centers comes out clean.
  • Immediately press one kiss, tip side down, into center of each muffin. On wire rack, cool 10 minutes; remove from pan and cool completely.
