Spiced Pumpkin Pancakes

Whip up a double batch and freeze extras. Microwave or toast for a quick and wholesome weekday breakfast. Makes 12 servings.

  • 2 cups uncooked Cream of Rice® Hot Cereal
  • 1/4 cup brown sugar
  • 2 tsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 cups milk
  • 1 cup canned pumpkin
  • 1 large egg
  • 2 Tbsp. unsalted butter, melted plus additional butter for cooking pancakes
  • maple syrup
  • Combine Cream of Rice, brown sugar, pumpkin pie spice, baking powder, baking soda and salt in large bowl.
  • Combine milk, pumpkin, egg and butter and stir into flour mixture.
  • Heat skillet over medium heat and melt one tablespoon butter. Pour batter into skillet, using about ¼ cup for each pancake. Cook 4 minutes or until tops are bubbly and edges are set. Flip and cook 3 to 4 minutes until golden.
  • Repeat with remaining batter using additional butter when needed. Serve with maple syrup.
