Oatmeal Raisin Cookies

These delicious, crisp cookies will disappear before your very eyes. Makes 3 dozen cookies.

  • 3/4 cup uncooked Cream of Rice® Hot Cereal
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/2 cup butter, softened
  • 2/3 cup brown sugar
  • 1 large egg
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups rolled oats
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts
  • Preheat oven to 350°F.
  • Combine Cream of Rice, baking soda, cinnamon and salt and set aside.
  • In large bowl, with electric mixer, beat butter and brown sugar until fluffy. Beat in egg and vanilla until smooth. Gradually add Cream of Rice mixture and beat just until blended. Stir in oats, raisins and walnuts.
  • Chill dough if desired. Drop dough by rounded tablespoons 2 inches apart on ungreased cookie sheet. Bake 10 to 12 minutes until golden. Cool on baking sheet on wire rack for 5 minutes. Remove from baking sheet and cool completely.
