Mixed Berry Cobbler

Take advantage of plentiful fresh berries when in season. Works just as well with frozen berries in the off season. Makes 6 servings.

  • 1 1/2 cups Cream of Rice® Hot Cereal (uncooked, reserve additional 3 Tbsp.)
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 5 Tbsp. unsalted butter
  • 1 cup milk
  • 6 cups assorted fresh or frozen berries
  • Preheat oven to 375°F. Combine 1-1/2 cups Cream of Rice, 2 tablespoons sugar, baking powder and salt in a large bowl.
  • With pastry blender or fork, cut butter into Cream of Rice mixture until mixture resembles coarse crumbs. Stir in milk until just combined.
  • Combine berries, remaining ¼ cup sugar and remaining 2 tablespoons Cream of Rice and turn into a shallow 10-inch baking dish. Spoon Cream of Rice mixture over berries, leaving a 1-inch border around edge.
  • Bake 30 minutes or until hot and bubbling and toothpick inserted into center of dough comes out clean. Serve warm with whipped cream.
