Maple Breakfast Bake

This versatile breakfast dish is perfect for brunch or you can make it ahead and keep on hand for a nutritious breakfast on the go. Makes: 8 servings.

  • 1/2 cup unsalted butter, softened
  • 10 large eggs, divided
  • 2 cups Cream of Wheat Maple Brown Sugar Cereal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup plain Greek yogurt
  • 1 cup chopped cooked breakfast sausage
  • 1 small onion, chopped
  • 1 small red pepper, chopped
  • 8 ounces sliced mushrooms
  • 1 cup shredded cheddar
  • Preheat oven to 375°F. Line 9 x 13 inch pan with aluminum foil and spray with Chef’s Joy non-stick cooking spray.
  • In a medium bowl with electric mixer at medium speed, beat butter with ½ cup Cream of Wheat. Beat in 2 eggs, one at a time.
  • Combine remaining Cream of Wheat with baking powder and baking soda, then fold into butter mix alternately with ½ cup yogurt.
  • Spread batter evenly over bottom of pan. Bake 20 minutes or until golden.
  • In large skillet, melt butter over medium heat and cook onion 2 minutes. Add pepper and mushrooms and cook 5 minutes.
  • In medium bowl, beat remaining 8 eggs. Stir in sausage and vegetable mixture and pour over Cream of Wheat crust.
  • Bake 15 minutes or until almost set. Sprinkle with cheese and bake 5 minutes or until eggs are set and cheese is melted.
