Maple, Apple and Bacon Breakfast Muffins

Bacon is the surprise ingredient in this sweet and savory breakfast muffin. Makes: 12 muffins

  • 1 ¼ cups Cream of Wheat Maple Brown Sugar Hot Cereal
  • 1 ¼ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 ¼ cups milk
  • 6 tablespoons butter, melted
  • 1 cup chopped apple
  • 8 slices bacon, cooked and crumbled
  • Preheat oven to 400°F. Spray 12-cup muffin pan with Baker's Joy® non-stick spray with flour.
  • Combine Cream of Wheat, flour, sugar and baking powder in a large bowl. Stir in eggs, milk and butter just until moistened. Fold in apples. Evenly spoon batter into prepared muffin cups. Bake 20 minutes or until golden and toothpick inserted in centers comes out clean.
