Fruity Breakfast Pizza

Makes 8 servings.

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 6 packets Cream of Wheat Banana’s & Cream Instant Hot Cereal (2 cups)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups plain Greek yogurt, divided
  • 1/3 cup peanut butter
  • 1 tablespoon honey
  • Assorted cut up fruit
  • Nonstick cooking spray
  • Preheat oven to 350°F. Spray 12-inch pizza pan with Baker’s Joy non-stick spray with flour.
  • In a medium bowl with electric mixer at medium speed, beat butter with 2 packets Cream of Wheat. Beat in eggs, one at a time.
  • Combine remaining Cream of Wheat with baking powder and baking soda. Fold into butter mixture alternately with ½ cup yogurt.
  • Spread batter evenly on prepared pan. Bake 15 minutes or until golden and toothpick inserted in center comes out clean. Remove and cool completely.
  • Combine remaining 1 cup yogurt, peanut butter and honey. Spread over cooled crust.
  • Top with fruit and drizzle with additional honey if desired.
