Crispy Banana Cream Stuffed French Toast

Makes 4 servings.

  • 4 slices whole wheat bread
  • 6 tablespoons peanut butter, divided
  • 2/3 cup sliced strawberries
  • 1 large egg
  • 2 tablespoons milk
  • 2 packets Cream of Wheat Banana’s & Cream Instant Hot Cereal (2/3 cup)
  • 2 tablespoons butter, divided
  • Spread peanut butter evenly on 4 slices bread. Arrange strawberries over peanut butter on 2 slices of bread. Place remaining bread slices over strawberries to make 2 sandwiches.
  • Beat egg and milk in shallow bowl until well blended. Dip sandwiches, one at a time, into egg mixture, allowing egg to soak into sandwich. Then dip into cereal, turning to evenly coat both sides.
  • Melt butter in large skillet or griddle over medium heat. Add sandwiches and cook 6 to 8 minutes or until golden brown on both sides, turning once. Serve with syrup, if desired.
