Chocolate Peanut Butter Brownie Bites

These little bites are packed with rich chocolate flavor. Makes 24 brownie bites.

  • 1 cup nonfat vanilla Greek yogurt
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 large egg
  • 1 cup uncooked Cream of Rice® Hot Cereal
  • 1 tsp. baking soda
  • 1 cup chocolate chips
  • Preheat oven to 350ºF. Lightly grease 24 cup mini-muffin pan.
  • Combine yogurt, peanut butter, brown sugar, cocoa powder and egg and stir until blended.
  • Stir in Cream of Rice and baking soda. Fold in chocolate chips. Spoon batter evenly into prepare muffin tins.
  • Bake 15 minutes or until a toothpick inserted in centers comes out clean. Cool on wire rack 5 minutes, remove from pan and cool completely.
