Banana Chocolate Chip Bread

A delicious way to use up overripe bananas. Makes 1 loaf.

  • 3 very ripe bananas, mashed (about 1 1/2 cups)
  • 1/3 cup plain nonfat Greek yogurt
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 1 1/2 cups uncooked Cream of Rice® Hot Cereal
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 1 cup chocolate chips
  • Preheat oven to 350°F. Lightly grease 9 x 5-inch loaf pan.
  • Combine bananas, yogurt, brown sugar, egg and vanilla in large bowl.
  • Stir in Cream of Rice, baking powder, salt and baking soda until combined. Stir in chocolate chips.
  • Pour batter into prepared pan. Bake 50 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 10 minutes; remove from pan and cool completely.
