Banana Berry Pancake Pie

Makes 4 servings.

  • 2 packets Cream of Wheat Bananas & Cream Instant Hot Cereal (2/3 cup)
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup milk
  • 1 large egg, slightly beaten
  • 2 tablespoons butter, melted
  • 2 cups sliced strawberries
  • 1 cup sliced bananas
  • Maple syrup
  • Preheat oven to 350° F. Spray 10-inch nonstick skillet with Baker’s Joy non-stick spray with flour; set aside.
  • Combine Cream of Wheat, flour and baking powder. Stir in milk, egg and butter. Gently stir in 1 cup strawberries. Pour batter into prepared skillet. Bake 20 minutes or until toothpick inserted in center comes out clean.
  • Remove pancake to serving platter. Top with strawberries and bananas and serve with maple syrup.
